Meal Prep on Whole 30

The holidays are a crazy time for us all. For some reason the thought of Santa coming to visit means cookies, more cookies, alcohol and lots of other junk. I have gotten a ton of a chocolate deliveries to the office, bottles of wine as gifts, and offered sweets & snacks at just about every place I go. January 1st truly marks the beginning of a healthier life for me. No more excuses, no more waiting till Monday, it’s happening today.

I am just beginning my second Whole 30 challenge and I cannot wait to see and feel the results!

These recipes below are free from: gluten, added sugar, carbs, dairy, and alcohol. I am someone who LOVES to go out to eat so creating delicious and exciting meals at home is important.

I cut up a package of chicken and placed an equal amount in each of my 4 marinating season bowls. After the grill was heated I lined a cookie sheet with foil and grilled them for about 10 minutes.

FOUR DAY MEAL PREP 

Monday – Hawaiian Chicken

Cauli rice with sautéed garlic, onions and ginger. Served with coconut amino marinated chicken and sprinkled with sesame seeds.

Tuesday – Taco Wannabe

Spicy cayenne dry rubbed chicken, cauli rice, avocado half, jalepenos, fresh limes, scallions, mango, & salsa.

Wednesday – Frank’s Fire Salad

Chicken in Frank’s burning hot sauce, served over arugula & romaine, topped with celery, tomatoes & olives.

Thursday – Italian Salad

Lemon, pepper, sea salt & balsamic chicken, over arugula, piled high with peppers, apples, almonds, olives, and tomatoes.
