Meatballs On White Bean Tomato Salad

In my house it’s always gravy on Sunday’s, so the girls improvise instead of splurging with spaghetti.

This is a remake from one of my favorite restaurants, a Mima’s salad. The perfect way to eat meatballs guilt free.

Ingredients

Sauce

  • 1 can tomatoes
  • 2 cloves garlic
  • Salt & pepper
  • 1 Small onion
  • Fresh basil

Meatballs

  • 1 lb. ground beef
  • 1 egg
  • Salt & pepper
  • 3/4 cup sauce

Salad

  • Arugula
  • 1 can white beans
  • 2 tbsp olive oil
  • Salt & pepper
  • 1 cup diced tomatoes
  • 1/2 diced onion

Directions

  1. Sauté garlic and onion to makeyour sauce. Once cooked add 1 can of crushed tomatoes and stir.
  2. Season with salt pepper and garlic powder. Throw in a few leaves fresh basil if you have.
  3. Allow to simmer for at least an hour.
  4. Prepare your meatballs. Season the ground beef with salt, pepper, and garlic powder. Add an egg to mixture and a tbsp minced garlic. Pour 3/4 of your tomatoes sauce in with the meat.
  5. Roll your balls.
  6. Fill a bowl with arugula and pour your diced tomatoes and onion on top.
  7. Add meatballs to cook in the gravy.
  8. Once meatballs are done place on top of salad and enjoy!
