Sweet & Spicy Quinoa Shrimp Bowl

A sort of weird combo, but I needed to figure out a lunch option for a Friday during Lent. Actually came out totally delicious and will be making this again very soon! The perfect combination of sweet, tangy, and spicy!


For shrimp marinade

  • 1 Pound Shrimp
  • 1 tbsp olive oil
  • 1 tbsp rice vinegar
  • 3 tbsp coconut aminos
  • 1 tsp honey
  • 1/2 of a lime
  • 1 tbsp chili powder
  • 1 tbsp cayenne pepper
  • 1 tsp paprika
  • Salt, pepper, crushed red paper to taste

For the side

  • 1 cup pineapple cut into chunks
  • 1 yellow onion chopped
  • 4 cloves garlic minced
  • 1/4 cup cilantro

For Quinoa

  • 1 cup uncooked quinoa
  • 1 tbsp jalepenos
  • 2 scallions sliced small
  • 1/2 cup cilantro
  • salt, pepper
  • lime juice


1) In a large bowl combine dry marinade spices and mix. Then add your rice vinegar, olive oil, coconut aminos, and honey. Squeeze in lime juice. Place the shrimp in the bowl to soak in the marinade.

2) Boil the water to prepare your quinoa. Rinse quinoa and follow cook directions listed on bag. Mine required 1 cup quinoa and 2 cups water boil, then cover and simmer an additional 15 minutes.

3) Heat a skillet with 1 & 1/2 tbsp ghee. Once hot sauté the chopped onion, garlic, and scallions. After a few minutes add in the pineapple chunks.

4) In a large pan cook shrimp. I poured all of the marinade into the pan. They cook pretty fast so keep and eye on them and turn them after a few minutes.

5) Once the quinoa is cooked add scallions, jalepenos, salt, pepper, and squeezed lime. Mix well.

I filled a bowl with a large scoop of the quinoa, a nice scoop of the pineapple onion mix, and topped it off with the spicy shrimp. DELISH!
