Pork fried rice

Ingredients

  • 1 package ground pork
  • 1 bag or head of cauliflower grated
  • 1 tbsp grated ginger
  • 1 tbsp sesame seeds
  • 1 tbsp sesame oil
  • 1 tsp honey
  • 1/4 cup chopped scallions
  • 4 cloves minced garlic
  • 1/2 cup chopped broccoli
  • 1/2 cup sliced mushrooms
  • 3 tbsp coconut aminos (or soy sauce)
  • 2 eggs
  • Salt & pepper
  • Hot sauce/sriracha drizzle
  • Ghee (or oil)

Directions

  1. In a bowl mix the pork, honey, 1/2 the garlic, sesame seeds, sesame oil, grated ginger, and 1/2 of the scallions.
  2. Cook until slightly brown. Set aside.
  3. Heat skillet with ghee, add garlic, broccoli, and any other veggies you like. Mix in the coconut aminos.
  4. In a separate pan heat ghee and fry eggs. Continue chopping and mixing them up.
  5. Stir the pork and eggs into the cauli mix.
  6. Serve topped with sliced scallions, sesames, and drizzled in hot sauce. Yummm🔥🍚🥡
